- 白芝麻,辣椒面,香油,生抽,蚝油,老抽,糖,陈醋,盐 | ||

## 流程 | ||
|
||
1. 鸡爪泡水洗干净,用1根葱,5片姜,料酒,一小把花椒,1个八角,1个香叶焯水,水开后煮8分钟 | ||
2. 鸡爪捞出泡冰水30min | ||
3. 酱汁制作: | ||
- 找一个耐高温的碗,加入蒜末,4勺辣椒面,2勺白芝麻搅拌均匀 | ||
- 锅里1:1加入食用油和香油,烧制冒烟后均匀淋在碗中混合物上 | ||
- 加入15勺生抽,2勺蚝油,1勺老抽,3勺糖,10勺陈醋,3勺盐 | ||
4. 配菜: | ||
- 1个柠檬用盐搓洗表面后擦干切半圆片,去籽 | ||
- 1~2个小米辣切丁 | ||
- 1小把香菜切断 | ||
- 1个洋葱切丝 | ||
5. 找个大碗把鸡爪沥干放好,把配菜铺在上方,淋入酱汁,加入适量水后搅拌均匀 | ||
6. 冰箱冷藏2~3小时即可食用 | ||

- 1勺老抽 | ||
- 1勺蚝油 | ||
- 1勺豆瓣酱 | ||
- 1/4勺糖 | ||
- 1/4勺盐 | ||
3. 腌制好后将排骨均匀裹上蒸肉米粉 | ||
4. 盘子底部铺土豆块,上面摆排骨 | ||
5. 水上汽后蒸40分钟 | ||
6. 出锅撒葱花 | ||

- 土豆可以换成红薯 | ||
- 高压锅做法是锅内刷油加一点水,铺上土豆和排骨,压20分钟 |
