## 配料

2~3 人份

- 鸡爪1.5LB
- 柠檬1个
- 洋葱1个
- 香菜1小把
- 5瓣蒜切成蒜末
- 白芝麻,辣椒面,香油,生抽,蚝油,老抽,糖,陈醋,盐

## 流程

1. 鸡爪泡水洗干净,用1根葱,5片姜,料酒,一小把花椒,1个八角,1个香叶焯水,水开后煮8分钟
2. 鸡爪捞出泡冰水30min
3. 酱汁制作:
- 找一个耐高温的碗,加入蒜末,4勺辣椒面,2勺白芝麻搅拌均匀
- 锅里1:1加入食用油和香油,烧制冒烟后均匀淋在碗中混合物上
- 加入15勺生抽,2勺蚝油,1勺老抽,3勺糖,10勺陈醋,3勺盐
4. 配菜:
- 1个柠檬用盐搓洗表面后擦干切半圆片,去籽
- 1~2个小米辣切丁
- 1小把香菜切断
- 1个洋葱切丝
5. 找个大碗把鸡爪沥干放好,把配菜铺在上方,淋入酱汁,加入适量水后搅拌均匀
6. 冰箱冷藏2~3小时即可食用

## 评注

- 腌过的柠檬好吃
- 酱汁的水可以换成雪碧
- 鸡爪可以在泡冷水后剔骨

## 配料

3 人份

- 1LB排骨
- 1个土豆去皮切滚刀块
- 2瓣蒜切片
- 蒸肉粉(买不到找个教程自己做)

## 流程

1. 排骨泡水去除血水后,用淀粉搓去异味,冲洗干净,擦干水分
2. 加入排骨腌料,抓匀腌制10分钟
- 1勺料酒
- 3勺生抽
- 1勺老抽
- 1勺蚝油
- 1勺豆瓣酱
- 1/4勺糖
- 1/4勺盐
3. 腌制好后将排骨均匀裹上蒸肉米粉
4. 盘子底部铺土豆块,上面摆排骨
5. 水上汽后蒸40分钟
6. 出锅撒葱花

## 评注

- 土豆可以换成红薯
- 高压锅做法是锅内刷油加一点水,铺上土豆和排骨,压20分钟
