- modified self host system to use supabase postgres instead of a standalone postgres
- for now, the standalone postgres is still present but it will be removed later
- updated the self-host docs with updated instructions
- move `self-host` directory to repo root - add supabase - add supabase config - add supabse example environment config
- move `docker-compose.yml` to `self-host` directory
- update `./docs` index readme - update `./self-host` index readme
