Describe the task

Vite shows better frontend performance due to better tree shaking and therefore lighter bundles and less js to load and parse for the browser.

Due to nextcloud/mail#10405, nextcloud/mail#10427 and nextcloud/mail#10428 we put this on hold. Mail will go back from Vite to Webpack for now.
