Process Flowchart as Project Checklist / Live Timeline

Hi y'all.

In a nutshell / TL;DR :
I need a process flowchart to act as a project checklist. When a process is “checked off” or ideally initialed and dated by the corresponding owner (or anyone), it turns grey (or customizable).

A little deeper:
We build custom machines. I made a flowchart for the overall project workflow from receiving the order, through engineering, manufacturing, testing, and delivery. A flowchart acting as a checklist for each active project will tell any of us:

• the status of the project at a glance
• who should be working on it at any given time
• if certain critical milestones have been completed (like approvals & invoices)
• where a project is maybe “stuck”
• bottlenecks / weak points in our process
  Ideally, each project would get a flowchart formed from a template, and can be edited a limited amount (checking boxes or dating/initialing, and comments/notes), where the template could, of course, be fully editable.

Here's a piece of an example flowchart showing what I'm looking for.
The top would be the template, or what it looks like at the beginning of the project.
The bottom is what it might look like mid-project.
Does something like this exist?? I'm a little surprised I can't find this feature anywhere.
