Customize webfinger responses

Hello!

I'm looking to implement WebFinger for a different part of my app, and was running into Doorkeeper taking control of it. I think this gem should expose some kind of way to override the WebFinger controller, as having to write a Rack middleware to override Doorkeeper is very unintuitive.
