The Github API we are using already provides the sort of information, we simply don't make use of it. Free free to modify the code and submit a PR if you want to. Extracting the information is easy, I guess, then you can write a helm command such as helm-github-stars-list-language to list all languages and after selecting a language by user, list all projects in that language.

As said @xuchunyang, this is not supported but this can be a good feature :)
I think the real difficulty is to review how we generate and manipulate the cache, it was not thought to classify any repositories..
