Recommended way of starting with a previous version of Hydrogen?

There's a couple of open issues (#2266 and #2468) that are blocking us from working with the latest Hydrogen release.

Can anyone suggest the best way of starting a project with a previous or specific version of Hydrogen?

For example, we tried npm create @shopify/[email protected], but that doesn't work.

I've also tried starting from previous releases of the skeleton template like the example below, but that doesn't work either.

+1 We're a Shopify partner and sometimes have to support merchants on older versions of hydrogen
