I have alphabetical order in projects but no in subprojects. Apparentaly the sort inside a project (subprojects) follows the project id.

No it does not. The alphabetical order exist over the projects, but over subprojects, the order does not exist. See the following real example from my redmine 1.2.0

  1. PROJECTES COMERCIALS (parent project)
    KHOBAR HOTEL CUINA (subproject)
    774 HOTENCO SATHER (subproject)
    ANTENA 3 TV (subproject)
    ASADOR CARRER BRUC (subproject)
    BAR EBAS (subproject)
    more...
