Provide an option for selecting which repositories should be replicated by a Stratum 1

Not all repos may be relevant for people setting up their own (private) Stratum 1, e.g. the riscv.eessi.io repo. It would be nice if the playbooks provide some mechanism / option that allows people to select which ones should be replicated.
